Our hand cut Scottish Undyed Smoked Haddock Fillets are wet brined in a sea salt solution and then cold smoked for a short period, taking on their pale colour as they hit the air following removal from the kiln.

Skipness Smokehouse’s Scottish Hot Smoked Salmon is a premium quality hand crafted gourmet food, renowned for its succulent flavour and its moist and flaky texture.
Our dedication to crafting this unique Scottish Hot Smoked Salmon means unlike other smokehouses we use less salt in our brine and do not take the kiln to such a high temperature, this prevents the fish drying out. However, the process restricts us to a shorter shelf life than our Scottish Cold Smoked Salmon.
We supply whole sides (minimum 900g), half sides (minimum 450g), quarter sides (minimum 225g) and multi packs to suit your needs.
Scottish Cold Smoked Salmon

Our premium Scottish Cold Smoked Salmon is traditionally hand crafted and uses a dry brining process and a slow cold smoke. The fillets can take up to 48 hours to complete and generate a firm texture with a subtly unique smokey flavour.
